How Is Kona Coffee Processed?
The journey begins with the careful separation of the outer skin and pulp from the precious coffee seed using a pulper. Following this, a wet fermentation process immerses the beans in water for 12 to 24 hours, allowing them to develop their distinct flavor profile. Sun-drying under the Hawaiian sun for one to two weeks further enhances the beans' richness.
The art of Kona coffee doesn't stop there. Post-drying, meticulous sorting takes place on vibrating tables, utilising gravity to distinguish superior beans from the rest. This rigorous process adheres to the standards set by the Hawaii Department, ensuring that only the finest beans make their way into the final product.
